Terra e Sale

is a young winery created in Romagna in 2016.

Alan di Criscienzo, the owner, has been cultivating ancient vineyards in the uncontaminated Sintria Valley, part of the Vena del Gesso Park and Unesco World Heritage Site, where saltwater outcrops can be seen.

Earth and salt, and their combination, distinguish this new winery.

Area:
At an elevation of 150 meters above sea level, the first hills of the Romagna Apennines are composed of brown clay and blue Pliocene marine sediments, mixed with chalk. Due to its narrow shape, the valley always has good ventilation and significant thermal variations.

The vinification process involves no skin contact, traditional slow pressing in vertical presses, and fermentation in steel vats at a slightly controlled temperature. After six months in untoasted barrels on fine lees, the wine is aged for at least six months in bottle.

The wine has a straw yellow color and presents scents of white and yellow flowers, yellow fruits, and aromatic herbs such as sage and broom. The body is balanced by acidity, with a fresh and marked savoriness, making it suitable for repeated consumption.

Vigna Zattaglia (25 years old) is on brown clays, which are interspersed with blue Pliocene sedimentary marine clay and chalk.

White wine is made from red grapes without stems and skins. The process often involves slow pressing in a vertical press. Spontaneous fermentation takes place in steel vats at a slightly controlled temperature. Aging for six months on fine lees in cement followed by at least two months in bottle.

The wine ha a bright copper color with sensations of blueberry and strawberry. Touches of star anise, camphor, and green pepper on the entrance. Fresh and saline, vibrant. Enveloping and delicate with brackish nuances.

Vigna Zattaglia (30 years old) is on brown clays, which are interspersed with blue Pliocene sedimentary marine clay and chalk.

Vinification without stems, traditional slow pressing in vertical press. Spontaneous fermentation in steel vats at a slightly controlled temperature. Maceration for eighteen days. Aging for six months on fine lees in cement followed by at least two months in bottle.

The wine has a ruby red color that reflects beautifully.

The aroma is clear and frank, with notes of plum, cherry, dried tomato, and oregano. The taste-olfactory perceptions reveal tannin accompanied by refreshing acidity. The body and pseudo-heat are balanced and the fruit is omnipresent.

Vinification without stems, traditional slow pressing in vertical press. Spontaneous fermentation in steel vats at a slightly controlled temperature. Maceration for eighteen days. Aging for twelve months on fine lees in cement followed by at least twenty-four months in bottle.

The wine has a bright and intense ruby red colour.

It is frank with aromas of black cherry and dried tomatoes. The olfactory dance continues with notes of black pepper, herbaceous hints of thyme, and subtle balsamic notes. At the bottom, dried flowers and tobacco.

The entrance is decided, delicate, with a smooth continuum of tannins and there's a vibrant recall after each sip.
